So, tomorrow we are having some friends over for dinner. They don't cook so they like anything I make. I've been stockpiling shrimp shells so I think I will serve bisque as a main. Few apps first, savarin for dessert.
I was thinking of making biscuits to go with the soup and calling it a day but wondered what else people thought might go well with the menu.
Thoughts? Something else instead of biscuits? Another side?
I forgot to say that it's after a full day of work. Shrimp stock and bisque will be most of my efforts. Thank God shrimp stocks are fast. /img/vbsmilies/smilies/biggrin.gif
Is bisque summery enough? I didn't know it could be a main dish. I've only had it as a starter so the idea doesn't excite me much. Will you be grilling shrimp as well? If shrimp is on your mind you can do a whole shrimp evening. Shrimp salad served in endive leaves, grilled shrimp skewers, and bisque.
Make your fumet a day ahead of time then you can flavor it how you like. Mix in some cream and blitz in the proc, season to taste and you should be good to go.
Personally I like shells, leek, garlic, chili, salt pepper, smoked paprika, etc.
A salad on the side is always nice. I dunno about biscuits, only because I think I'd like something to soak up the soup with.
I don't know where you live but if you could get decent tomatoes, might make a nice salad. You could grill some corn and do a corn relish/salad something too.
IDK about biscuits .
True they are great at absorbing but after that...pfffffft.....you have a little pile of mush.
I am sick to death of the phrase " crusty bread with a good butter" but IMO that is what is needed with a bisque.
Unless you go with @cheflayne bite size grilled cheese option.
Maybe plated open face......
They cancelled so we had cheese, olives and paté, with some cocktails. Kids had grilled cheese and cherries. Shrimp shells still frozen. /img/vbsmilies/smilies/rolleyes.gif
