Fudge

Help, looking for a "fudge-like" mixture to sandwich between chocolate cake, or even a mousse (no gelatine though) that I could use. The "fudge-like" consistency must be able to stand heat (hot, hot in SA at the moment) and not go kinda mushy - should be like a "silky" taste. Much appreciated.

Try this it is a fudge frosting that is very creamy yet pretty sturdy

4 c. powdered sugar
3/4 c. margarine
2/3 c. cocoa
1 tsp. vanilla
1/2 c. milk
Baking is Therapy

Would a ganache work in your application?

Hello
I don't think a ganache would work for my application - ganache is kind of a runny consistency that thickens. I am looking for something to spread between cakes - I have an excellent moist chocolate cake that has a very rich topping (melted butter, fresh cream and white chocolate) and I prepare a polka dot collar (band) to tie around the cake. For a while I have been sandwiching these cakes with lots and lots of whippped cream. I am looking for something chocolatey/silky with nuts to sandwich between cakes and thought a fudge-like consistency might work. I could sandwich with mousse but most bakers I know, uses this method - I like doing different things.
