Almond pastry filled with pistachio frangipan and chocolate ganache. No blast chiller, so ganache didn't have time to set before it had to be presented.

Dacquoise base, strawberry bavaroise, and strawberry jelly (which was too dark because I'd used fresh berries instead of frozen.) (and this photo shows why you should grease your rings, or at least heat it with a torch when you're taking it off...)
