Slow cooked chivo with cucumber manzano salsa.

The chivo was first marinaded in lemon juice, evoo, seasame seeds, onion, garlic, tumeric, and fresh oregano.

The goat had a lot of fat on it, and marrow in the bones, which made it a good canidate for slow cooking.

This is what I was craving for lunch, so I turned it into a dinner special. Really thinly pounded breaded chicken, topped with greens, roasted pepper, mozz, red onion, tomatoes and balsamic glaze. Very run of the mill for these parts but it sure sells great.

Not really a plate presentation but it's the closest category available. I've been playing with pickled peaches lately and decided to go a step further with it. I took some of my pickled peaches, their liquid, fresh peaches, peach nectar and water, pureed it, heated it, sieved it, balanced it with honey and salt (keeping it to the savory side) and gave it a round of syneresis filtering. It tastes like a spiced peach vinaigrette (minus the oil) which is what I hoped would happen. I have a few ideas in mind for it in the near future.

This is a fruit salad for a breakfast i served today. The fruits are watermelon, melon, pinaple, guava, swetened pumpkin and apple.

The decor is a stick of cinammon (with which i cooked the guava, apples and the pumpkin) and a stic of sugar cane.
