I am regional Executive Chef for the largest managed services company in North America, with over 35 years of experience in all aspects of cooking. Trained in Switzerland and Germany, I have worked stages also in France, occasionally the US and Caribbean. I am a subject matter expert for government training authorities, and an assessor of apprentices for the cook trade. I am a Certified Chef de Cuiscene, the highest accreditation achievable in Canada, and a food safety instructor. My hero is Auguste Escoffier (my avatar), the greatest chef ever. Over the past five or so years, I have been active within our industry to encourage cooks to seek formal training and accreditation and I continue to lobby our law makers to make a trade certification mandatory for professional cooks and chefs. In this country, and in the US, it is too easy for someone with little or no real training to call themselves "chefs", when in fact they barely qualify as cooks. This dilutes and diminishes our trade, and makes us all look like hacks. You can't call yourself an electrician, or a plumber without a trade certification, so why can you as a cook?? The worst a bad plumber can do is create a flood, a bad cook can KILL you! Well, that's my rant... |

When not cooking, I like to forge knives - hence my username "steelbanger". I am also a passionate scuba diver, and like to play in my garden with my wife and kids. |

I write menus and recipes, source and evaluate ingredients, supervise many accounts and help the local chefs with any culinary questions and challenges. I design kitchens, write reviews and proposals for prospective clients, and train staff. |
