Hi, 

I love baking and I do bake a lot at home. I leave in the UK but I am from France. 

My partner is opening a coffee shop in Northern Ireland and he asked me to become his baker. 

The coffee shop won't only be about cakes, pastries etc but about mainly about good coffee and good food.

It's not a big coffee shop, and we are located in a small town, about 14,000 people.

We do worked together in the past and it went very well but I was wondering if you could give me some advise. 

Should I follow some professional courses or I should go ahead and see how it goes. 

I am very organised and up to date about HACCP and food hygiene, and I think I could bring a french flair as I am pretty creative.

I am just worried about the logistic, stock etc...

Please let me know what are your thoughts on this situation.

I think that is brilliant!! What a fantastic opportunity for you to branch out from your kitchen to a coffee shop that will be the same as your home kitchen only serving more people.

I would just start with three to five of your more basic home style creations. Don't go crazy, just enough to satisfy the coffee shop crowd in the starting days of the cafe.

Great recipes like: scones, cookies, muffins, etc are the usual suspects to get acquainted with and become amazingly good at. If you stick with the more simpler recipes yet add your flair to it then you will do well.

Logistics are whatever the cafe hours of operation are and what you are going to present to people. Most people have coffee and baked goods first thing in the morning so plan to be awake and ready to go a few hours before you open to get in and bake the pars that are needed.

I would not recommend professional courses at this moment in time and you should just see how it goes.

If you would like more specifics I am more than willing to help you figure out the logistics, stock, prep time, recipes, etc. I am a great sounding board and have done my fair share of baking for coffee shops and cafes.
