I have a giant black non-stick wok-ish looking pan. I first bought it for home use and it performed horribly. The pan never get hot enough during cooking. It heats up nicely and loses pretty much all the heat once the food goes in.

Now I use it in a commercial kitchen and it performs like a dream. No sticking and no hot spots.

I guess my home burner was too small and the heat too weak for the pan.
