My buns very soft after baking, and texture is very good. Am facing 2 problems:
1. Buns top cracks when we press the buns. Am using egg wash for sesame seeds and using deck oven without steam for baking.
2.Buns are too much soft even they can't hold more than 2 chicken paties.
Kindly for commercial bakin.
