I've been cooking jambalaya for many moons and have a request to cater a party for 50.  The jambalaya will not be the main course but I will need to supply a large quantity.  I'm looking for experiences/suggestions with regards to transport.  The jambalaya will be cooked at my site just prior to delivery.  Thanks - Tom

Large size 6.00 hotel pans in Cambro-type thermal boxes? 

I mean the only thing that really doesnt hold/travel well in Cambros are those 

with dislike of moisture like pastries, breaded things, things that need to stay crisp. 

Cuz Cambro boxes are like big solid insulated plastic bags.
