Unless you want to spend a lot of money and jeopardize your reputation call them now and tell them you are unable to do the job.  Back up and educate yourself on how to run a food business.  I don't mean to be unkind but it appears you do not have a clue.  Talk to your local SCORE representative and get some help.  I lost a LOT of money on my first try.  Good luck whatever you decide.
