Culinary schools in Mexico/ certifications in the U.S.

Does anyone know of any good culinary school in mexico? Moving to mexico was always in my plan but it have become more of a possible necessity. Also does anyone know of any certification i could get here in the states with in the next six months or so. i am safe serve certified. but i am in search of more certification that can help me while i am over their.
