Just wondering how many of you have used dandelion greens in your cooking... experiences, thoughts, opinions welcome! :eek:

They are pretty common up here and we include them in salads traditionally. More and more people are incorporating them into their diets for their medicinal value as well. They have taraxin which aids digestion. They can also be cooked like spinach with a bit of lemon juice.

Many moons ago a local producer concocted a dandelion wine. I'm not sure it ever took off; it was pretty nasty stuff....

A student in my class made a "traditional" dinner of old fashioned recipes, including dandelion greens, picked from the lawn and boiled for hours. They tasted as bad to us as they looked. I think it's something you have to grow up with.

An old neighbor used to make dandelion wine.
