I don't know enough about the cuisine to know regional differences. I do have a nice cookbook, I should explore it more.
And for lunch Friday I had the buffet at The Star of India here in Salt Lake. It tasted like buffet food, with the exception of the chiockpeas - they were really good, and of course I don't remember the name of the dish. I'll write it down next time I eat there.

Chana masala... yum!
I like dosa and idli and most South Indian dishes, especially from a local place rum by a Tamil family (very spicy), but due to familiarity tend to eat Bengali more often.
A past friend was from Goa... but I think that cuisine fits into a totally different category. Very tasty though.
The regional foods of India are fascinating in both taste and their history.
