Going to Japan in search of spoon & fork crafts-people

I am a Cutlery craftsman specializing in handles made of Ebony, exotic burls & Silver. I am going to japan in search of highest quality knife ' Tangs' to fit into my handles, but also forks & spoons. I know that Japan has an ancient history of knife & sword craftsmanship and I am going to the Seki Festival in October ... but can anyone help me locate craftsmen / manufacturers of spoons & forks as well ?
