Just joined the forum and wanted to introduce myself to everyone :D
I live in Miami and starting classes at Le Cordon Bleu on July 5th... very excited!! Found this forum a few days ago, great reading....

I like others am getting into the the culinary field not for the money, but for the love of food and pleasures that come with it. I've been in retail, airlines, and sales for quite some time now, but never felt fulfilled. I'm going into the field at 110%. I want to do something I love and enjoy, not just a paycheck. I'm Dutch by birth, but have lived in the wonderful city of Miami for the last 23 years. I would love to work in South beach and maybe even open up my own restaurant someday.... first things first though, culinary school. Baby steps....
