Been a member for a couple of years but only my second time on here. Been in the industry since I was 14 now 51. As an owner for the last 15 years I spend less time in the kitchen but probably 15 hours a week. Latest fun pastime has been replacing knife handles and restoring blades. Do it for fun and for really personal gifts to friends who are worthy (you know what mean) don't want to make money otherwise it will become a job. I keep on going and have a few people scouring yard sales for old carbon knives. Here is my latest, 1900 Henckels If anyone wants to talk knives I am a knife nerd and if anyone is in Brooklyn I have no problem showing them how to sharpen. We all have a duty to pass on knowledge for no other reason than karma.
