hi everyone!!

i was wondering if anyone here can recommend a brand of parchment paper sheet that will not wrinkle when it comes into contact with macaron batter and that it will not deform the round shape of my macaron before and during baking

any help is greatly appreciated.  thanks everyone

as far as my experience goes, that is just the nature of parchment paper. It will wrinkle slightly with any moisture contact. 

For macarons, I like silpat, or more specific, sil-eco mats.

I use Silpats but since buying a commercial oven I have found they make the feet lift on my macarons when cooking.

If I use parchment paper my macarons are perfect EXCEPT I am finding they are deformed by the parchment paper too. I have found the brown parchment paper I buy at the local supermarket is better than the white BACO professional I bought - it just seems thicker somehow. I see so many macaron makers successfully using parchment paper I am sure there must be some brand that is OK with macarons. So I too would like to know fi there is a brand I can use.
