Now that I've moved to the semi-countryside, I will finally be able to do things like buy half a pig, all cut up as I like it, for the freezer.

Question: how big a chest freezer do I need to hold half a pig?

Go big. We started with one 4 foot chest freezer. Then added a 2 door reach in. A year later we need an 8 foot chest freezer. The following year I finally listened to reason from a far more experienced operator and installed an outdoor 8 x 10 walk in and sold off the others. Best $12k Ive ever spent. It's paid me back 10x that in a few short years.

Freezers are most efficient when packed full.
I would go big and use ice bags to fill in the empty spaces.
Every time you add something remove however many ice bags it displaces.
