Hi Jenise,

I create new formulas by prototype cycling.

First, know your goal then either start by using a basic plain cake recipe or find a recipe that is close to what your looking for.

Step 2, Bake it, taste it, take pictures of the crumb, take notes on the pan dimension, the material, the temp, etc.. Understand the characteristics.

Step 3, Redo the recipe by changing or adding variables (ideally one at a time) that you think will bring you closer to your goal.

Step 4, observe the results, take meticulous notes and pictures, taste it, make comments, get inspired for the next adjustment.

repeat step 3 and 4 until you reach your goal.
