I made These Lemon bars with intense lemon flavor and a buttery shortbread crust. This recipe is so simple, can be made ahead and even frozen

Ingredients:
For Dough:
  • 150g flour
  • Salt
  • 30g sugar
  • 85 g Melted butter

For Filling
  • 120ml Lemon Juice
  • 60g flour( 1/2 cup flour)
  • 4 Eggs
  • 300g sugar
  • 1 Tbsp Lemon zest

Instructions:
  1. In a Container, put 150g flour
  2. Add 30g Sugar
  3. Add a Pinch of salt
  4. Add 85g Melted butter
  5. Mix the dough with your fingers
  6. In a mold Size: 18cm, put parchment paper
  7. Sprinkle the dough into your lined pan and press down into a flat layer
  8. Bake in preheated oven at 170°C-338 °F for 25 -30 minutesFor filling:
  9. In a container, put 4 Eggs
  10. Add 1 Tbsp Lemon zest
  11. Add 300g Sugar
  12. Mix well
  13. Add 120ml Lemon juice
  14. Mix well
  15. Sift 60g Flour
  16. Mix well
  17. Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake.
  18. Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.
  19. Dust with powdered sugar and cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut
  20. Sprinkle lemon zest.

This from our recipe collection dates from 1950's.
Lemon Squares
Crust:
2 sticks butter
2 cups flour
1/2 cup powdered sugar
Topping:
1/2 cup lemon juice
4 eggs
2 cups sugar
1 teaspoon baking powder
1/4 cup flour
Powdered Sugar
For Crust: Cream butter and sugar. Add flour and gently combine; don't
overwork, or crust will be tough. Crust should just hold together. Press into
9x13 pan. Bake at 350 ° for 15 minutes. Crust should be golden, not
browned.
For Topping: Mix together lemon juice, eggs, sugar, baking powder, and
flour. Pour over crust; bake for an additional 20 - 25 minutes at 350 °.
Remove from oven; cool. Sprinkle with powdered sugar. Cut into square
