I made These Lemon bars with intense lemon flavor and a buttery shortbread crust. This recipe is so simple, can be made ahead and even frozen

- 150g flour
- Salt
- 30g sugar
- 85 g Melted butter
For Filling
- 120ml Lemon Juice
- 60g flour( 1/2 cup flour)
- 4 Eggs
- 300g sugar
- 1 Tbsp Lemon zest
Instructions:
- In a Container, put 150g flour
- Add 30g Sugar
- Add a Pinch of salt
- Add 85g Melted butter
- Mix the dough with your fingers
- In a mold Size: 18cm, put parchment paper
- Sprinkle the dough into your lined pan and press down into a flat layer
- Bake in preheated oven at 170°C-338 °F for 25 -30 minutesFor filling:
- In a container, put 4 Eggs
- Add 1 Tbsp Lemon zest
- Add 300g Sugar
- Mix well
- Add 120ml Lemon juice
- Mix well
- Sift 60g Flour
- Mix well
- Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake.
- Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.
- Dust with powdered sugar and cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut
- Sprinkle lemon zest.
