Welcome to ChefTalk. Your post of learning about the culinary and local culture in the Galician region of Spain is very interesting.
I've always been very interest in that region of Spain. I adore some of the dishes. I am very lucky to be friends with a neighborhood Mom from Galicia. For years I have eaten hers and her Mothers' cooking. The Mother makes her own bread, empanadas, etc. and has taught her daughter and 2 grand daughters. She will always bring by some links of chorizo when she makes it.
My family fishes the Gulf of Mexico at least once each summer. It has become tradition to keep the Red Snappers and the Leatherjackets for home. On the way we pick up fresh Gulf Shrimp, and stop for fresh 1015y onions right from the ground and pick some farm eggs.
We all gather and she will grill the Leatherjackets fillets Shrimp and Pulpo. Brings out her bread and she then makes Revuelto with the fresh eggs, fish, and onions. I sometimes wake up dreaming about this. They have family in Florida who sends them Wine and Cheese from Galicia when a container comes in.
Please post us directions to your site when you are done getting things together. Please include times. Also Air Carriers that can get the closest with an overseas flight.
It also may help you to Google some Travel Agents in the U.S. that specialize in that part of Spain. They may have some interest.
