Braised moose patties and potato gratin, swedish winter food. But Thursday is lasagna day.
Nice Lagom - I love moose a very good friend shot a 1200lb. moose a few years ago. We ate well - just sayin'. It's my favorite of all the venisons.

I browned then finished some Italian sausages in a simple sauce of San Marzanos, garlic, pepperoncini, salt, parsley and basil. Par boiled some Armoniche then finished in the sauce - oh yeah!!

This is Armoniche - it's a glutton for sauce.

I don't hunt here as I haven't had time to get my license but I've been helping cut moose up for 9 years now with my brother in law. I always wanted to do a whole moose but haven't had the chance
