This post isn't a recipe or specific question but rather in need of some inspiration and stories from others. I had a bad week for some reason in the kitchen. I am very good at what I do and have a huge passion for food. For some reason I have made mistakes on stupid little things that I know better lol. I was just reaching out to other chefs to see if they have any stories to keep my head up and hear their mistakes. I am a sous chef for a good size country club. No culinary education except for my experience in kitchen since I started out as a dish washer when I was 18. Any stories or advise would be greatly appreciated l. Thanks guys.

Dave, we all do it. It usually happens when you're experiencing what I call brain clutter. To many thoughts streaming into your brain and you screw up that little thing that you normally do without having to separate and organize your thoughts.
It's like fishing, some days you throw out the bait, then a tug, and you reel your focus back in. Then sometimes you throw out the bait, feel a nibble, and reel in an empty hook.

  You must be disciplined though. Like Kung Fu, you have to react without thinking. When you make that mistake, immediately find someone else to blame it on. That's being successful and wise.

One day at a time. The important thing is to forgive yourself and understand that we all do it. Quickly reflect on what caused your week to be under par and figure out how to bring it back up and beyond! Good luck my friend, and never forget why you do what you do.
