Then work on what degree of doneness is required for said problem customer.

Doesn't matter how many times they are sent back.

Some people will never accept what you produce even if it's exactly what they ordered.

Tell the manager you will have a replacement sent.  Also ask that the prawns be brought back to the kitchen check them.  If they are overcooked fix the problem.  If they are not overcooked get on with the nights work.

Yes prawns can be overcooked. They become rubbery to the mouth.
