I just discovered these knife bags on korin that have straps to hold knives in place and they seem like a great compromise, having greater versatility in what it can carry and requiring less space to open than a knife roll, but securing and protecting the knives better than a toolbox. Just wondering if people have experience with these or similar knife bags

For a few dollars more, get the ultimate edge bag from amazon. it opens up like a book so it takes up less space than unrolling. Yet all the knives and tools have separate handle holders. The deluxe has more pockets outside than regular that I have.

Spoiledbroth got the hard case from Korea on eBay seems good too. Can't fit much more than stuff other knives though. Ill post the link if I can find it. Ps sign up for korin industry membership if you haven't already.

The two main concerns I have with knife bags are as follows:

Sanitaton. Kitchens are messy places, and stuff gets spilled. Knife bags are a right royal p.i.t.a. to clean properly when say, salad dressing is spilled on it.

Security. You can't hang a big nasty padlock on a knife roll when you go for break, and you can easily stuff a knife roll down your pants or in a hotelpan of food.and walk away with it.

I like the pastic tool boxes, when they get dirty, you just shove it in the dishwasher. You can plaster the thing with stickers, so you and everyone can tell at 50 feet away if its where you last put it.

Interesting, I feel like a box would make you stand out, have a $300 knife in a knife roll, and no one knows you have a knife worth over $100. Have a knife box and people assume you use very high end knives.

Not in my experience. Ive seen more knife rolls stolen than I want to know, never seen a toolbox stolen though, too personalized, everyone knows who it belongs to.

A single knife can walk off at anytime too. Cleavers seem to be immune to this affliction.

So far I've only seen a knife stolen, not an entire bag or case. Or at least i think it was stolen, the guy obviously had a drug problem, may of just sold it and said it was stolen. Pretty sure he left his knives overnight frequently, which is kind of.... Especially in Detroit...

And really? Cleavers immune to it? My veg cleaver gets a lot of attention, feel like its the most likely one to disappear on me.

I've only worked in bbq catering and asian restaurants. My cleaver doesn't get much attention at either and I think it's undervalued because people are used to $20 chinatown cleavers that look similar to the untrained eye. My rules are don't talk up your knives, don't let people use your knives, and never tell them how much anything costs ever.

Right now im working for a company, at their fine dining 5 days a week, and at their brewery/restaurant 1 1/2 days a week. And at the fine dining there is 7 full time cooks, including sous, but not the head chef. Everyone is so professional and its so small, not very concerned about knife theft. But in the brewery/restaurant, its another story, most just being kids, too much of a screw up in highschool to go to college.

I got the bag despite recommendations otherwise. The volume of equipment i can fit in is quite impressive. The build quality is quite nice as well. The thing i dislike most about it is with all the metal loops and rivets, it looks like a large purse to me. Probably going to cut off the loops for the shoulder strap, maybe use a sharpie to black out the rivets and zipper handle.

Oh, and the tag for contact information doesnt fit well anywhere, would of preferred it sewn on.

As for the itinomonn, i am moving end of oct, and having had international knife shipments take 2 months before, i wasnt confident it would arrive before i moved, so i shipped it to my parents, just arrived there yesterday, will probably be a couple weeks before i visit and pick it up.
