Get two carbon steel pans of the size you desire. Cook in one and flip the other upside down as a cover.
Yeah that was my original thought too, but then I started thinking about it and if he wants a saute pan (not a fry), I don't know of anyone that manufactures a carbon steel one,

I don't know if you will find a saute that big. Have you considered a rondeau? Vollrath makes a stainless steel one that size that you can pick up for about $150.
