I like to follow J. Torres show on chocolate. Look him up at www.foodtv.com under shows and recipes. Unforuately the information is from current shows so you won't be able to see all he's done so far. But it's very interesting, I think.

I've seen chocolate and sugar work infomation at well known chefs web sites and a little info. at the sites that sell the supplies and manufactures sites.
