Cheesecake came to mind, even before I finished reading your post!

Absolutely! Cheesecake! You can try the plain run of the mill kind, you can add variations like dutch apple cheescake, chocolate chocolate chip cheesecake, pumpkin cheesecake (I used Emerils recipe for that one-deelish!), banana split cheesecake, the list goes on and on.....
Have fun, and report back with the yummy results.

p.s. Don't forget to wrap the pan well with foil beforehand so the baine marie doesn't permeate the pan and cause a soggy mess.
