I think given this information you should take the offer, and work.Starting as CDP while training for sous position, hours are heavy but no ot, closed on Sunday's and all major holidays. It's dc area and I'm still not completely familiar with the average wage. I do have a friend who's going to work for the dinex group in the city and he's getting 12 an hour. I do enjoy the restaurant, chef is great, we have a garden, all of our produce and proteins are extremely local and gorgeous.
