I was thinking about the Norton IB 8 but I saw some very beautiful stones. One was  a Hoffritz 

washita and since I like things are very nice to look at I thought I might consider it.But  not if the Norton is much better to use. Right now I have a Wusthof  classic icon , a carbon bone knife a global .

I've sharpened a lot of knives and in general people will steer you towards japanese waterstones.  Certainly it is helpful on harder steels like for your carbon steel boner and the global, and any harder japanese steels you pick up in the future.

However, for soft stainless, especially on fat wusthof knives with a lot of metal behind them, an annoying bolster, and hard to abrade steel to boot,  the norton stone could work well enough.  It's not goign to hold a high level of polish anyway so the norton IB8 or even the cheapo carborundum stones sold in chinatown are good enough.  Finish it on an arkansas stone.

Thank you , the Carborundum is good thing to think about . Any particular one? Also what about the Hoffritz washita ? All of my knives are Dull and since I don't have great knives ,I'm not looking for perfection, but I want to be able to sharpen them all, to a very good degree .
