Martha has a buttermilk panna cotta in her dessert cookbook that's pretty good (very light). Also made one from Grand Finales, p. 65 mocha panna cotta with carmal rum sauce....it's very heavy so I lightened it.
Mocha Panna Cotta:
2 1/2 tsp. gelatin
2 oz. h2o
18 oz. heavy cream
6 oz.sugar
16 oz. sour cream
2 1/2 tsp. instant espresso
4 oz. semi sweet chocolate
soften gelatin in water. melt choc..
mix the rest together and bring up to "hot" over a double boiler, then fold in gelatin and chocolate.
I didn't try their carmel rum sauce, I went another dirrection with this item.
