In the meantime get yourself a copy of Ruhlman's RATIO and a scale MYWEIGH KD8000 and learn baker's percentages. Once accomplished, you'll be way ahead of the game. In my day around the 1970s I wished I knew of a bakery school for laypersons here in Calif. 8,,,((
