The grill where i work in the summer is an order of magnitude hotter than any other grill i've worked at. Stuck a thermometer on the counter on the other side of the aisle and it reached 140F.

With this kind of heat, is well ventilated clothing still the best option? Should i be wearing thicker cotton jackets to try to protect from the radiant heat? Is there other options? Are there non shiny versions of like metal working clothing or clothing to work near volcanoes? Or like firefighter jackets?

Don't know exactly what you are wearing, but a double breasted chef jacket is designed to protect you from the heat. That's why it's a standard in professional kitchens.

Are the walls covered with "Mirror-type" stainless steel ? They also can reflect all the heat back! (paint it in black)
