I wondered not long ago if he was still alive and working but never got around to googling it. It's been a long time since I've made blackened catfish. Ate it a lot in the early-mid 90s, thanks to him.
I had the pleasure of meeting, talking, and dining with him at a dinner at which he was one of the honorees. Despite his celebrity status, he was a truly down to earth and gentle soul who was still very interested and actively involved in mentoring and educating young and up and coming culinary talents. His generous and giving personality touched many and he will be missed.
