My money's on nerve damage. /img/vbsmilies/smilies/surprised.gifI guess after you've fried the outside of your hands enough it develops an armor?
I think I could make tea with the hot water from my sink, but I'm a wus when it comes to heat and my hands. Ive been cooking for a while now (not 100 dinners a night) and I've never seriously burned myself - knock on wood - but I have chopped off the top of an occasional finger, though. I do in fact stick my finger in carbonara to test the temp. If I can't stand it it's too hot to temper the egg and will scramble, but this guy is just showboating. It's his gimmick to get customers because nobody in their right mind would use a hand when tongs are available.I am not even allowed to hand wash dishes at my house.
Cannot get the water hot enuf to do any good.
Can however dip finger and taste when something is cooking on stovetop.
Not that I would ever stick my fingers into a common vessel just cuz I am too lazy to wash another spoon /img/vbsmilies/smilies/rolleyes.gif

Oh, did Kuan say that? /img/vbsmilies/smilies/rolleyes.gif+1 this. Not totally heat proof but I'm getting there. I can dip up to my second knuckle without it feeling to hot. I agree with kuan that it's some kind of nerve damage, although I feel no decreased sensitivity.
I worked with this really old guy at a bar and grill ages ago who would pull plates out of a 500 degree oven and transfer two steps to a cutting board. He'd even stop sometimes and look at something, totally unphased. Chuck. That guy was awesome.
Also that guy in the first video kinda builds up a batter layer on his fingers which I'm sure helps.
