Cambro plastic for your cold side 6 and 9 pans. You can lid them, label and date, all on one sheet pan into the walk in. Of course that is if you can guarantee that you can find all your lids.
As for how many, what size, you need to figure out your needs first. You'll definitely need a tub for lettuce.
But seriously, your prep and your rotation will determine how many you need.
