I had cooked a sirloin steak over the weekend. I had the bright idea to make a steak pot pie with the leftover. Mirepoix, steak (duh), potato, quartered mushrooms, red wine, beef bone broth and my was it delicious!


Last night was Polish night - kielbasa, sauerkraut, and cabbage/mushroom pirogi. Again a very satisfying meal.

Good on you for not letting that leftover steak go to waste. Your steak pot pie concoction sounds absolutely scrumptious, with all those savory ingredients like mirepoix, potato, mushrooms, and a splash of red wine and beef bone broth.

I made the pot pie after getting home from seeing the surgeon - good news is he's amazed at my ability to self heal at my age (70) so he sees no reason to open me up. I broke my back after a fall on Jan 12. Was misdiagnosed by rapid care and three weeks later was getting worse so I saw my primary who sent me to a real imagining.place and they called me that afternoon and get your but to ORTHONY asap. That doctor looked at them and asked how I was walking after that and I told him "look I'm a tough guy". And so it goes - my advice . . . don't get old. LOL

LOL. I know exactly what you mean. I am the same age and I ain't about to start getting old at this age. Once you do it is too hard to reverse the process or turn it around. Aw hell no. Not me. Not yet. LOL

My wife had some leftover salsa verde that needed to be used and that started the wheels to turning on tonight's dinner. Went to grocery store to figure where I was going with the verde. Love to bargain hunt...picked up a pork sirloin roast for $1.99 per lb., baby asparagus for $1.89, cilantro, and a poblano pepper. Knew I had the other ingredients at home that would work to bring this stew idea together.

Cut the bone out of the roast and used it to make a stock to use as base for stew. Diced pork and marinated in the salsa verde for 3 hours to which I added achiote, Mexican oregano, cumin, and coriander. Strained and cleaned off the marinade to use in stew base sauce.

Started off by sauteing
garlic, added poblano, then ground pepita, and finally cilantro stems before tossing

in marinated pork.

Deglazed with reserved marinade and then stock.

Remaining ingredients used in stew were
Mexican grey squash, asparagus, pickled okra, green cabbage, collard greens, corn, chickpeas, and cilantro.



Served over brown rice.

This is kind of unorthodox, but man does it smell and taste delicious. Potato, leek soup. Leeks, garlic, red potatoes beef stock and as a kicker some leftover French fries. I used beef stock because it was open and then added some chicken stock. Too sore today to put the immersion blender to it so that'll tomorrows project.
