Hello,

I was wondering if any experienced dishwashers out there know which types of heavy-duty scrubber sponges are the best for use in a commercial kitchen setting. So far I have been using the stainless steel wool scrubber however this was caught as a hazard due to the stainless steel wool pieces falling out of the scrubber.

So far I have seen the following products:

Scotch-Brite® Heavy Duty Industrial Strength Scour Pad

Scotch-Brite® Heavy Duty Scour Pad 6

Scotch-Brite® Heavy Duty Scrub Sponges

I wanted to know if anyone here uses any of these products in their kitchens or if they know of some superior product that I may not know of. I look forward to your responses.

We've always found that those stainless steel "scrubbies" worked where nothing else did. Are you saying the HD is saying don't use them? Probably the next best thing is the Scotch-Brite® Heavy Duty Industrial Strength Scour Pad. We use them on grills. But there is no contest.

Thanks for the information you provided Halb and for your reply in general,

I am not saying that the Health Departement is saying don't use them. The stainless steel "scrubbies" seem to be unsafe due to the failure mode that could occur where the metal strands fall out of the scrubbie itself. Our goal would be to prevent this from happening by using a better alternative.
 
I think you have pretty much covered the alternatives. Easy enough to try each out for yourself. As far as the scrubbies go, we don't wait until they start to fall apart to replace them. Before that, I have never noticed them shedding, at least the ones we use from Restaurant Depot. Still, anything from the scrubbie would be in the wash sink and be rinsed away. I can't see how it would get into your food.
