My garden feeds me a good part of the winter so looking for greens that freeze well after being blanched. I am on coumadin so need to keep my vitamin K intake level and my favorite lettuce has been horrible this winter from the store so I have been eating my frozen greens more. With grocery prices sky high I was thinking of freezing and canning more this year.
Kale is a must, turnip greens are good, spinach... anything else I should add that will grow in the north?
My pickled cucumbers and homemade sauerkraut are 2 other great sources of vit K I use in winter.
Open to suggestions... I hate cooked peas and frozen thawed ones don't cut it in salads, not like fresh from the garden.
