The answer would seem to be subjective. What do you think would make a very good queso? The basic recipe is pretty simple, it's the flavoring that makes them unique. Simple cheese like American or pepper jack or what ever your preference melted in half and half or white sauce, then seasoned as you like with cayenne or jalapeno, garlic, or something else to add some flavor. I would pass it through a strainer or drum sieve to make it really smooth but otherwise it's entirely your choice.
