Was looking to do a baked flatbread with a savory tomato jam, pancetta fontana, ricotta salata basil and arugula and was wondering if someone had a savory tomato jam recipe they would share?
 
Sounds really good. Im going to have to try this. the tomato jam Idea sounds great…. unfortunately I don’t have one…
 
here's a recipe for a savory tomato jam :
Ingredients:
  • 2 lbs. ripe tomatoes, cored and roughly chopped
  • 1 medium onion, chopped
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tsp. salt
  • 1/2 tsp. ground cumin
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  1. In a large pot, combine the chopped tomatoes, onion, brown sugar, apple cider vinegar, salt, cumin, smoked paprika, and cayenne pepper.
  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for about 1 1/2 to 2 hours, stirring occasionally, until the mixture has thickened and the liquid has mostly evaporated.
  3. Once the tomato jam has thickened, remove it from the heat and let it cool to room temperature.
  4. Transfer the tomato jam to a jar or airtight container and store it in the refrigerator for up to 2 weeks.
This tomato jam is perfect for spreading on flatbread and for various toppings, Enjoy!

I know you asked this a while ago, I water bath can mine so you don’t need that level of precision.
Just tomatoes, Sherry vinegar, lemon juice, brown sugar, garlic, Cumin, add a diced jalapeño or two they candy but still help keep it on a savory note.
 
Savory Tomato Jam:
Ingredients:
  • 2 lbs (about 900g) ripe tomatoes, chopped
  • 1 medium onion, finely chopped
  • 1/2 cup granulated sugar
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon olive oil
Instructions:
  1. Prepare Tomatoes: Blanch the tomatoes in boiling water for about 1 minute, then transfer to an ice water bath. Peel the tomatoes, remove the seeds, and chop the flesh.
  2. Sauté Onion: In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent and slightly caramelized.
  3. Add Tomatoes and Sugar: Add the chopped tomatoes to the skillet along with the sugar, red wine vinegar, red pepper flakes, salt, and black pepper. Stir to combine.
  4. Simmer: Bring the mixture to a simmer over medium heat. Reduce the heat to low and let the mixture gently simmer, stirring occasionally, until it thickens and reaches a jam-like consistency. This should take about 1 to 1.5 hours.
  5. Add Herbs: Stir in the dried oregano and thyme. Continue to simmer for another 10-15 minutes to infuse the flavors.
  6. Cool and Store: Remove the skillet from the heat and let the tomato jam cool to room temperature. Transfer it to a clean glass jar or airtight container. It will continue to thicken as it cools.
  7. Serve: Spread the savory tomato jam on your baked flatbread as a flavorful base.
